I only can find a list with the demo's

The only chance we will have to see the Greek Mirage 2000 flying will be on arrivals and departures day. There is no solo flying dislpay routine for this plane or for any other HAF plane (expet from occasional T-6 Texan II demos).

There should be no problem with taking shots from outside the base. Lots of people are going to do this on arrivals day.
