I think it that have a few reasons. First of all 1/800 seconds is just on the edge of good shutter speeds to have 99% sharp. the 2nd and much more important reason is the lens. The HSM (HyperSonicMotor) of you lens (150-500) is not so fast and you are often (a bit) out of focus. Most helicopter shots are sharp (the are not so fast). Since you are often at F/8 the sharpness of you lens isn't a problem. If you try to have rotor blur don;t go to f/16 but go to iso100. Sharpness will become worse at higher f-number than f/13 often (due diffraction).
Another major point is try to do (more) Photoshop. The horizon isn't a problem but a little bit more sharpness and contrast are. I did a bit photoshopping on your best (,in my opinion,)picture. I did a little bit oversharped the picture to get it sharp but now I think the picture is awesome!

(the idea was to take the car till we found out it cost 55 euros to get up with a car, hence the choice of shoes),when we arrived at the first pub of the town i crashed
